Scharffen Berger Milk Nibby Bar

Scharffen Berger Milk Nibby BarThis is the fourth Scharffen Berger Milk Nibby Bar I’ve gotten a hold of. The first one was a sample from a trade show last year. Unfortunately I stored it next to something minty and it was absorbed into the bar. I didn’t think it was fair to review it that way ... but I ate it and it was tasty enough for me to put it on my list. But I couldn’t find another one!

The second one I bought earlier this year when I was in San Francisco. I needed to get my parking validated at the Ferry Terminal so I figured the Scharffen Berger store there was the perfect place to make my $5 minimum and try this bar again.

And I did! I just, well, ate it, without making any notes.

So then I had to find it yet again. Luckily after my dismal experience with the Krackel bar, I went on the prowl at Cost Plus World Market’s high end chocolate shelves to console myself and grabbed one.

And then I ate it. Remember, I was depressed about the Krackel, grief makes you do strange things.

Now I’m feeling better (3 ounces of real chocolate is one of the lesser known 5 Stages of Grief) and thought I should give it another go.

Scharffen Berger Milk Nibby Bar

The Milk Chocolate Nibby Bar is much darker than most milk bars. At 41% cacao, it’s almost as dark as the middling Hershey’s Special Dark (which is 45%). So the color is like coffee with only a dash of milk.

It doesn’t smell particularly sweet. More like wood chips and of course chocolate.

Snapping the bar, it’s pretty solid and crisp. Inside there are the little nibs, not as many as a crisped rice bar, but a great many of them dotting the chocolate base. The chocolate is smooth but still a little rustic. The notes are a strong caramelized flavor, the cocoa and lots more woodsy scents. The nibs are crunchy and buttery, almost like they’ve also been caramelized before adding to the chocolate. The texture is like a macadamia nut and perhaps a little of the soy bean’s malty flavors.

It’s a very dark bar for a milk chocolate product. The tangy bite that I didn’t care for in their straight bar is moderated well by the dark and bitter punch of the nibs.

I’m in love with this bar. I can’t say that it’s a replacement for the Krackel, because, well, it was $3.99. But it sure makes me smile when I eat it and it’s pretty rare for me to go out and keep buying the same bar over and over again when I have so many new ones at home.

The package has full nutritional labeling but also helpfully tells me that the whole 3 ounce bar has 410 calories. A quick calculation also tells me that this bar contains 100% of the my saturated fat for the day. Oops, I guess I’m eating pretty wholesome for the rest of the day. (But also 24% of my daily fiber in the whole bar plus 10 grams of protein!)

UPDATE 4/11/2009: I’ve had two more of these since the review, including comparing it to the new 68% Dark Milk and have bumped this up from the original rating of 9 out of 10 to a perfect 10 out of 10.

Loukoumi Artisan Confections

Last week I wrote about one of the oldest known confections, Jordan Almonds. This week I’ve got a huge array of Lokum, or Turkish Delight in front of me.

Rose Turkish Delight Sweet jellies have been know for at least 500 years in the Middle East and Indian subcontinent. Early versions used honey and other fruit juices as a sweet base. Modern Turkish Delight uses sugar for the most part. But the result is similar. Instead of a firm and gelatinous confection like a true jelly (which has pectin as a thickener) or gummi (which uses gelatin as a thickener), Turkish Delight is a fiendishly simple, relying on a touch of starch and careful cooking to create a semi-solid cube of delicate, sweet flavor.

This is from Loukoumi Artisan Confections based in New Zealand since 1970. They use the traditional recipe for the product and it was absolutely fresh when I got it, so this was a real treat.

Rose Turkish DelightThe first flavor I ever tried of Turkish Delight (which I think I knew as Turkish Paste when I was a kid) was Rose. I find floral flavors to be fresh tasting for the most part, though I know many of us find them a bit soapy.

This rose was a medium pink (kind of alarming, but completely natural). The squares are heavily dusted with powdered sugar, which is the worst thing about Turkish Delight. It’s just not keyboard friendly.

The squares are surprisingly light, not dense and gelatinous, more soft and fleshy like Mochi can be. The texture is more like a soft and smooth paste than a jelly as well. Think of it like a firm honey.

The flavor is rather strong for rose - very straight ahead and traditional, like pushing your whole nose into a bouquet of heavily scented tea roses. But it melts easily on the tongue and doesn’t feel too clingy or cloying.

Manuka Honey & Rainforest Lemon Turkish DelightOne of the flavors that had me most excited when Ross McKenzie of Loukoumi contacted me was the line of Manuka Honey flavors. Manuka is from blossoms of the Tea Tree bush and has a strong balsam & spicy flavor to it. I tried the Manuka Honey & Rainforest Lemon which has aromatic Australian Lemon Myrtle.

I absolutely loved the design of the box on this one. Inside each of the boxes is an inset tray lined with light paper. They were only 250 grams instead of a full pound (I’m often stymied when I find Turkish Delight in prepacked pound boxes - I can’t eat all that!).

Even though the pieces are a delicate golden yellow color, there are no colorings in there, it’s all from the ingredients.

Honey & Lemon Verbena Turkish Delight

It smells like freshly baked lemon cake.

And oh, the flavor.

It feels a bit softer and smoother in the mouth than the Rose (if that’s possible). It’s not a sweet and has an aromatic quality that mixes the mellow honey notes with the light lemon, like a lemon essence or lemon balm.

It’s barely sweet, like a bubble of honey with a touch of zest to it.

I can see how Edmund would sell out his family for something like this.

Pomegranate Turkish DelightThe last flavor I got was one I wasn’t quite sure of from the description. Pomegranate.

All of the Turkish Delight I’ve had to date has been aromatically flavored, that is, it’s all about the scent of the flavor. Lemon, orange or rose, it’s never been juicy or tangy in any way.

This box even looks different from the others, with an extreme close up of luminous beads of pomegranate. It says: The sharp distinctive flavors of the pomegranate complement our soft, rich delight to create a perfectly balanced sweet that will leave your taste buds spellbound.

Pomegranate Turkish DelightThe scent is dark and jammy, like a mix of piping-hot blueberry pie and those raspberry filled shortbread cookies.

The flavor is at first sweet but dark and mellow, then the rich berry flavors come more forward. There’s a little tangy bite to it that really reminds me of a berry jam. It’s a much more intense flavor than the other Turkish Delight varieties here.

Loukoumi makes a wide variety of other flavors, I sampled but a few. They include the traditional array: Almond, Hazelnut, Lemon with Peel, Orange with Peel, Berry, Mint, Vanilla and Lime. And a range of gourmet flavors (many incorporating New Zealand & Australian flavors): Honey & Fig, Honey & Ginger, Honey & Hazelnut, Honey & Quince, Liquorice and Manuka Honey & Blackcurrant.

There are some major and minor issues with these confections. Turkish Delight is notoriously hard to eat. One of the things I like about most candies is that they’re usually pretty easy to portion out and are ready to eat out of the package and require little or no cleanup. I got powdered sugar everywhere trying to eat these out of the box. It’s a little easier when put a few pieces into a small dish and just ate it with it under my chin to catch the poof of powder.

The second issue is humidity. Dampness is not their friend. Luckily Southern California is a great climate to eat these, even when it’s visciously hot. But if they do get a little damp they will get a bit of a crust on the outside, just a bit of graininess. It won’t be great for the texture, but doesn’t impede the flavor.

The third issue is getting a hold of it. Their website isn’t up now, but I’m hoping that soon I’ll be able to tell you about a place here in North America that you can order from (and save the international shipping).

Those issues aside, this is the best Turkish Delight I think I’ve ever had. I am really curious to try many more of the flavors, especially the honey based ones.

This is why we keep traditional methods alive, they work.

Grapefruit Mentos (Japan)

With news that the Pink Grapefruit (Pamplemousse) Mentos were discontinued, I scoured the web and purchased a box of 40 rolls in late May.

I have about half left.

But a morning browse on eBay a couple of weeks ago led to an auction of some Mentos from Japan in a yellow package simply flavored Grapefruit. I had to have them. So I placed an order with JBox and they arrived earlier this week.

Sporting and expiry date of 2010, these puppies must be fresh. The package is much like the others from around the world, the large Mentos logo, a picture of the fruit flavor on the right end and, of course, the name of the flavor in both English and Japanese.

They’re a nice yellow color and have the crunchy shell and soft chew inside. They’re tart and fragrant and have a good mix of citrus oil and zest notes. They’re not quite like the Pamplemousse though. The citrus is a bit more generic, a little floral and less bitter. Still extremely satisfying. I have two more rolls and if this were a permanent Japanese flavor, JBox could count on more orders. At a dollar fifty a package (instead of the 75 cents or so for my remaining Pink Grapefruit), I wouldn’t buy a lot of them though. (Mentos, can you make Yuzu flavored next?)

Kasugai Pineapple Gummy

Kasugai Pineapple GummyI bought this package of Kasugai Pineapple Gummy Candy back in January on a trip to Little Tokyo that I’d hoped would cheer me up. After all, the most widely accepted definition of candy is sweetened, concentrated and read-to-eat fun [1].

The package is dominated by a photo of two real pineapples. Pineapples are the symbol of hospitality in Western culture and their Indian name, anana [2] means simply excellent fruit [3]. So what better combination to make lightly sweetened, concentrated and edible fun than to make it from the most excellent fruit?

The ingredients list goes like this: sugar, corn syrup, pineapple juice, gelatin, oblate powder, sorbitol, citric acid/malic acid, pectin, artificial pineapple flavor, palm oil, emulsifier, coloring (beta carotene).

Each gummi is individually wrapped. This keeps them fresh, which is good because I don’t usually eat a whole bag of gummis in one sitting. (But then again I have no problem eating stale gummis.)

The pieces are rounded, with a little crease in the top that might even make this look like a heart to some. Or maybe a peach.

Opening the little packet and the gummi is super soft, a little most but most of all, heavily scented. It smells like opening a can of pineapple: sweet but very deep. The chew is soft and pliable, almost like a Jell-O dessert.

It’s tangy and has a little sizzle to it with a good fruity burst. If I have a complaint about them, it might be that they’re just too fruity. After about five of them I get that same tongue burn. No, wait, that’s not a complaint. I love them. They make me happy. They’re concentrated bits of sunshine and tropical beaches. My misgivings are the fact that I find them hard to find and they’re pretty expensive for gummis.

Kasugai makes a pretty large array of flavors, most of them tropical including Lychee, Kiwi & Mango as well as the more middle-of-the road like Orange, Apple, Muscat (white grape), Peach and Strawberry.

Chocolate Dipped Altoids - Creme de Menthe

Altoids has a pretty wide variety of flavors and their newest innovation (from late 2006) is offering their most popular mint flavors covered in dark chocolate. This summer Wrigley’s has not only brought out a new mint flavor, Creme de Menthe, they also offer it in the Altoids Dark Chocolate Dipped Mints format.

The dark brown tin with gold and green accents looks rich and inviting. It was easy to spot on the rack at the checkout at Safeway when I was up in the Bay Area and I was lucky enough to catch them on sale, too, at only $1.50 for the package.

The tin design has been revised a bit in the past year. (Here’s the old and here’s the new.) Inside is a kraft brown waxed paper liner.

The dark chocolate covered mints don’t look like much and look identical to the previous varieties. They smell, well, minty and chocolatey.

I prefer crunching mine. The chocolate cleaves off pretty easily and the mint inside has a satisfying crunch. But the chocolate is pretty good too, though tastes more of mint than chocolate, it’s creamy and has a buttery melt and dry finish.

I can’t quite peg what Creme de Menthe is in the first place, so all I can say is that this variety is for people who would like Altoids but find them too strong.

These are like eating a hardened Junior Mint. The dark chocolate complements the mellow mint well, the mint lingers and feels fresh and cool longer after it’s gone.

I ate the whole tin. While the curiously strong Peppermint variety keeps me from eating more than, say, eight or ten in one sitting, it took me only two sessions to eat this whole package. But of course the package only holds 1.76 ounces, so it wasn’t a huge binge. And my breath smells pretty good now. I think I might prefer the softer bite of something like Junior Mints, Dutch Mints or York Peppermint Patties, but I have to say that the crunch was different enough that these aren’t quite interchangeable. (But they are more expensive.)

As with all the traditional Altoids mints, these have gelatin in them and are unsuitable for vegetarians.

Short & Sweet: Hazelnut Bites

As the temps are climbing here in Southern California, I need to eat up all my chocolate before it melts. So instead rolling these little goodies out one at a time, here’s a few bites in brief:

Fiat Gianduia

I picked up these cute little cubes at Lucca, an Italian deli/grocer in San Francisco a couple of months ago. The graphic design of the little wrappers with bold FIAT logo and variations was just irresistible. They’re made by Pasticceria Majani, founded in 1796 and one of the first confectioners to make actual solid chocolate in Europe. The Fiat line of chocolates were introduced in 1911 and actually named in honor of the Italian car.

Fiat GianduiaThis style of gianduia cube is rather common in Europe, I’ve had a few variations of these before.

They’re all layered. They’re a little shy of one inch on the longest side and about 3/4 of an inch tall and wide (so they’re not quite cubes).

FIAT Classico: two medium layers alternate with two light colored hazelnut paste layers. It’s extremely sweet, very hazelnutty. But really too sweet that it burns my throat. The only way to cut this is with a strong cup of coffee or espresso (which may be the way they’re intended to be eaten). I didn’t finish my second one.

FIAT NOIR: this is the one shown here, it’s a dark chocolate layer with a thick medium gianduia center. Even the dark chocolate layer is a hazelnut infused chocolate, but it’s the center that’s packed with a hazelnut punch. The combo is spot on perfect. A little difference in the texture, a little difference in the sweetness and nuttiness and a perfect bite.

FIAT CAFFE: the caffe looks a lot like the Noir, but has a darker center than the top and bottom layers. It’s sweet though, and has a light coffee flavor and a slight bitter tang. What sets this one apart from the other two is that it has almonds in it as well as hazelnuts. At first I thought it was too sweet, but once the bitterness and a dry finish kicks in, I came to appreciate it more, just as I did with unsweetened coffee as a teenager.

I give the line an 8 out of 10.

Caffarel Hazelnut Buds

If I thought the Fiat cubes were a good deal, I guess I didn’t realize what a value my Caffarel find was.

I got these little Caffarel foil hazelnut flower buds at Chocolate Covered in San Francisco. The little package had five pieces for four dollars ... so eighty cents each (and Jack, who runs the store, also gave me one to eat while I was there).

I love Caffarel’s little bites, no matter what shape they are. These are rather small, they’re obvious built in halves and mushed together to create the three dimensional bud, I kind of like pulling them apart with my teeth.

The milk chocolate shell is sweet and milky. The center is creamy and thick, a little fudgy and has tiny crushed hazelnut bits. It’s super smooth otherwise and slightly cool on the tongue. If you’re a fan of Perugina Baci, consider these a tiny milk chocolate version.

They’re just so adorable. I don’t know where to find them for sure, but if you’re a hazelnut fan scoop a few up.

Cote d'Or Milk ChocolateMy final hazelnut indulgence this week is the Cote d’Or Experiences Milk Creamy Smooth bar.

What clued me in that this was a hazelnut bar (since it’s not obvious) was that it was called a Smooth and intense MILK chocolate confection which is a coded way of saying, “there’s something else in this bar.”

The hazelnut paste is pretty far down on the list of ingredients, after the major chocolate ingredients and whey & milkfat but before the soy lecithin.

Like the dark bars I tried last week, the bar is big and thin, with the logo elephant on each segment.

Cote d'Or Milk Chocolate

It smells a little malty and very milky. It’s a softer bite than the dark bars (as is usually the case with milk chocolate). The bar has a smooth but fudgy consistency. The hazelnut flavors aren’t readily apparent, but there are some nice smoky and toasted notes to the bar.

It’s not too sweet, has a dash of malt and even a little burnt sugar bitterness to it that I find appealing. I can’t see myself buying one of these (I rarely buy milk chocolate unless it’s for a review) but knowing that Cote d’Or does a very mellow milk does intrigue me ... I may find myself experimenting with more of their product line.

Cote d’Or 70% Cacao Bars

Cote d'Or Cocoa Nibs in 70% Cacao & 70% Intense Cacao BarThere are so many mid-range chocolate bars available these days, just going into Target presents a whole aisle of upscale chocolate choices that go far beyond the traditional Hershey’s Milk Chocolate Bar or Nestle’s Crunch.

One European manufacturer that’s becoming ubiquitous is Cote d’Or. It’s Belgian chocolate, which has a certain cache. Cote d’Or was named for the Gold Coast of Africa, which is now Ghana and a prime cocoa growing area. The company was founded by Charles Neuhaus but is now owned by Kraft Foods (which owns many European chocolate companies, including Toblerone, Terry’s Chocolates of Whack-&-Unwrap-Orange fame, Milka & Marabou).

Though they’re made by Kraft, they’re imported and distributed by Ferrara Pan ... you know, the Atomic Fireball and Lemonheads folks. (But it makes a certain amount of sense, they don’t do chocolate candy but have a huge distribution network.)

I’ve never really given Cote d’Or much thought, I always put it in the same category as Ghirardelli or even Lindt - a very nice brand, but just not quite my bag. Or is it? Candy Blog is supposed to make me open my mouth and expand my mind, so I should be trying new things. So when a bunch of bars Cote d’Or 70% Cacao bars showed up in my All Candy Expo samples box, I had to give it another look.

Cote d'Or 70% Cacao

I started with the Intense 70% Cacao. The boxes are smart looking, just a paperboard box, great for protecting an unfinished bar. They’re 100 gram tablets (3.53 ounces), so it’s about 2.5 servings. There are 10 squares, each with the trumpeting Elephant icon of their logo.

The tempering is good, they have a great snap, if a little soft. The bar doesn’t look shiny like many others, but this is because of a texture in the mold that makes it matte. I think it makes the bar look a little dull. What sells it though is it smells wonderful - fresh and woodsy and of course chocolatey.

What struck me as odd about these bars is that they’re called Belgian Dark Chocolate Confection ... not just chocolate but they qualify it as a confection. Flipping over the box it shows that even though this is high cacao chocolate, it also has milkfat (though listed on the label right above soy lecithin, so not in very high proportion).

It melts quickly, it’s smooth and not too intense, no matter what the name says. It has a very buttery, nutty tasting base. It’s a little fruity, not acidic but has some raisin notes. For a dark, it’s very approachable.

Cote d'Or Cocoa Nibs in 70% Cacao

The bar that pretty much made me squeal with anticipation is the new Cocoa Nibs 70% Cacao. I’m a huge fan of nibs and this one promises caramelized cocoa nibs in DARK chocolate confection. Unlike the other 70% bar, this one has no milkfat, so is suitable for vegans.

It’s easy to see the nibs in the cross section. They’re the perfect proportion of chocolate and nibs. The caramelization is what makes this bar so nice. It’s not like they’re toffee coated, they’re just crips and crunchy, kind of like chocolate infused macadamia nuts.

The flavor is a bit more intense, but the variations in texture and the delivery of so much chocolate in each bite makes this bar a winner. I haven’t tasted it side by side with the Hershey’s Cacao Reserve, but since I expect them to be similar price points, I definitely say give this a try.

Dove Silky Smooth Milk Chocolate Bars

imageDove has been adding quite a few new items to their line. Not only do they have the Dove Bites and Caramels plus the little chocolate covered almonds, they’ve expanded their line of bars to include Single Origins, Organics and new flavor inclusions for their standard dark and milk chocolate. None of this new stuff, oddly enough, is included on their website.

I have a huge cache of 9 different bars that I’ve been making my way through for the past two weeks. Today I’ll cover their 3.52 ounce packages of Milk Chocolate products: Silky Smooth Milk Chocolate, Extra Creamy Silky Smooth Milk Chocolate, Blueberry Almond Silky Smooth Milk Chocolate and Peanut Toffee Crunch Silky Smooth Milk Chocolate.

While many of the flavor inclusions items are new, the biggest change is the packaging redesign. The large bars used to come in a simple foil wrap with paper sleeve design. The new version is a radical and welcome change.

The bars come in a paperboard box that opens like an envelope. Inside are tucked three individually foil wrapped bars, each a little over 1 ounce (the total weight for the package is 3.53 ounces).

My consistent complaint with the large 3 plus ounce tablet bars is that they’re not made for “eat some now, save some for later”. I usually end up putting my partially eaten bars into a ziploc bag because the foil wrapper is usually not enough, and of course the paper sleeves are often glued to the foil and are trashed when opening.

All of that is solved here. The box closes and opens easily, the bars are simple enough to pull out and unwrap ... and even if you don’t finish one, it’s easy to tuck it back into the package. It also helps with portion control. The 33 gram servings come to about 180 calories (a regular candy bar is usually around 50 grams and clocks in at 220-280 calories) so you feel like you’re getting a lot, especially since it’s presented so nicely.

imageI’ve had the Dove Silky Smooth Milk Chocolate before, but I thought I’d give it another try.

The format of the bar is really pleasant. The pieces are thick enough to give a good snap, but not so thick as to make you feel like you’re gnawing on the bar to bite off a piece. The squares break easily, each little bar has six.

The bite is far softer than a dark chocolate, but true to its name it is silky smooth. It doesn’t give up a lot of flavor at first, it’s mostly the texture and sweetness that I noticed.

A little later, on the second piece the more subtle notes of mild cocoa and caramel toasted milk came out. It’s still extremely sweet - so much that I really can’t eat it straight. Some coffee or plain almonds do a nice job of cutting it.

Still, it’s not for me. It’s not chocolatey enough, not roasted enough and reminds me of the difference between skim milk and whole milk when it comes to density.

imageThe first thing I noticed about the Dove Extra Creamy Silky Smooth Milk Chocolate was how light in color it is. The second thing I noticed was the smell. It’s very sweet and smells more like a toasty hot coffee cake than a chocolate bar. It’s milky and sugary with only a faint whiff of cocoa.

The bite is also soft, like original Silky Milk Chocolate. But this one has a much stickier melt. It’s smooth, don’t get me wrong, they haven’t led anyone astray, but it’s also thick and slightly fudgy.

Oddly enough, because of the lightness in color I was expecting this to be sweeter than the original, but it wasn’t, it was actually less sweet tasting.

The milk flavors were much stronger here, but mostly it was just an experience in sweet and silky texture.

So I turned over both boxes and tried to figure out what the difference was. Before tasting them I just assumed it was sugar. What I found is that it’s actually milk. The Extra Creamy, doesn’t have more “cream” as the name implies, it’s actually more skim milk.

The ingredients list goes like this:

Even though they both have the same 11 grams of fat per mini bar and it’s really only the skim milk that’s more plentiful in the Extra Creamy, the Extra Creamy has twice the cholesterol (10 mg versus 5 mg for the regular Milk). Extra Creamy also has 50% more calcium ... 6% of your daily RDA.

imageBeyond the choices in levels of milk chocolate, Dove has added some more decadent “candy bars” to the line now. The Peanut Toffee Crunch Silky Smooth Milk Chocolate pretty much had me loving it before I even opened the box.

The Peanut Toffee Crunch is simply crushed Munch bars (a great candy bar!) mixed into the milk chocolate. If you’ve never had a Munch bar, it’s just a thick slab of peanut brittle. The peanut toffee crunch is very simple, adds a wonderful texture, a hint of salt and the toasty flavors of both burnt sugar and roasted peanuts.

This is a great tasting bar. It’s creamy, it has the right proportion of crunchy bits and has pretty much real ingredients (some artificial flavors).

imageThe final bar is the Blueberry Almond Silk Smooth Milk Chocolate. The package says: pairs the sweetness of blueberries and perfectly roasted almonds with Dove Silky Smooth Milk Chocolate.

The almonds are crushed into little bits, but quite abundant. The blueberries, on the other hand, are not as plentiful and not spaced as evenly. The big thing I got out of this bar was a sore throat. I don’t know how it ended up tasting so much sweeter than the other bars but it did. There is an addition of sugar on the label after the blueberries (perhaps sweetened dried blueberries?). It’s totally unnecessary and really I wish there were more berries, with some sort of tart chewy component (but I have their Cranberry Almond in Silky Dark Chocolate to compare it to). Even weirder, a close reading of the nutrition facts says that this has less fat and less sugars but the same level of carbs (must be the almonds) than the three other bars.

It’s also the only one in the group that uses a preservative in it, TBHQ (I’m guessing for the blueberries).

Oh well, it doesn’t matter. Given the choice of this and the Peanut Toffee Crunch, I know what I’m grabbing every time.
